Mac Gregory is an executive senior leader, master mixologist, certified advanced sommelier, speaker, educator, columnist, beverage consultant, competition judge and top executive in the International Food and Beverage Community. Born in Charleston, South Carolina, but raised on the West Coast, Mac earned a degree in business from Arizona State University. He began his career in the hospitality industry in 1989 with Club Med Hotels and Resorts International. A 26-year veteran of the hotel/resort food and beverage industry, Mac was named CEO of Saint Marc USA in April of 2014 after having just served over 7 years with Starwood Hotels and Resorts as Corporate Director of Food and Beverage inclusive of 5 years with Starwood’s world-renowned AAA Five Diamond Phoenician Resort in Scottsdale, Arizona, as Executive Director of Food and Beverage.

At Club Med, Mac worked as a mixologist, beverage director and, eventually, corporate paymaster, until 1993. He then joined Hyatt Regency Hotels and Resorts Corporation, where he held the following positions: general manager, director of operations, hotel manager, mixologist, executive steward, banquet manager, general manager of the Golden Swan fine dining restaurant, general manager of the 727 Pine fine-dining restaurant, beverage director, advanced sommelier, assistant director of food and beverage, director of food and beverage and corporate officer of new builds and acquisitions. During his tenure with Hyatt Hotels and Resorts, Mac was exclusively chosen by the Pritzker family to continually open and establish all of their equity owned properties and asa selected corporate officer with Hyatt, Mac was able to develop, introduce and implement numerous Food and Beverage venue concepts throughout the Hyatt Worldwide Portfolio; including, Waterfall Juice Bar, El Cien Margarita Bar, and Japengo Restaurants, Lobby Sushi Barand others.

Mac has been the speaker and director of more than 350 winemaker specialty dinners and the moderator and host for numerous food and beverage seminars. A certified food and beverage educator, he also served as a corporate food and beverage trainer for Starwood Hotels and Resorts. He has established personal relationships with the finest wine producers, master brewers, master distillers and food and beverage specialists in the world. In 2002, Mac was given the opportunity to host and direct the prestigious DiRoNA Awards taking place in Seattle, Washington. In 2003, he hosted a tasting and educational seminar on the production and consumption of the world’s most exclusive tequilas at the Telluride Golf and Ski club; followed by a wine symposium and tasting for the ICPA Seattle convention, where he conducted two 400-person wine seminars focusing on “Wines of the World.” In 2004, Mac hosted 26 of America’s elite businessmen and women for a private dinner and wine tasting at Dale Chihuly’s world-famous glass studio and residence, where the top 10 most sought-after wines in America were showcased. In 2005, he was chosen as one of four judges to select the No. 1 wine in Monterey County from a field of 161 wines for the Monterey County Wine Commission and Wine Spectator magazine. Because of his strong ties to Monterey, California and being an expert in wine, Mac was also an eight-time selection as Guest Sommelier for the prestigious Masters of Food and Wine hosted at the elite, Park Hyatt Highlands Inn. In 2006, Mac was honored with an appointment as judge of the San Francisco World Spirit Competition (SFWSC) and Spirits of Mexico(IWSC) Competitions.

2007,was a special year for Mac as he was acquired by the iconic Phoenician Resort and was named Executive Director of Food and Beverage to serve on the Senior Leadership Team for the ultra-exclusive resort operation. After being acquired by The Phoenician, Mac introduced four new original and exclusive food and beverage venue concepts: Grape & Grain, IL Terrazzo, Relish Burger Bistro and J&G Steakhouse – each of which has received numerous accolades and awards and are still in operation today. In 2009, he earned the Cheers Innovator of the Year Award and served as a speaker for Cheers Beverage Conference 2009 and 2010. In 2009, Mac was named Top Mixologist by The Arizona Republic newspaper for his performance in the exclusive Devoured Mixology Contest. In 2010, he was selected as a judge for the Woodford Reserve Mixology Contest and was honored as one of the World’s Top 25 Mixologists by Bacardi International, attending its exclusive mixology summit in South Beach, Florida. Also in 2010, he was appointed director overseeing Starwood Hotels and Resorts’ corporate beverage procurement program leading Starwood Hotels and Resorts in their beverage purchasing directives. In 2011, Mac was hand selected from the Phoenician Resort to serve as Starwood’s North America Corporate Director of Food and Beverage overseeing 400+ hotel and resort properties and reporting directly to Starwood’s Corporate Offices. With his new role at the Starwood Corporate Office, Mac continued with his success of Food and Beverage venue concept development and implementation and was asked to also oversee Starwood Franchise F&B New Builds and Transitions Operations. In addition in 2011 Mac was chosen to another judging panel for the prominent IWSC Spirits of The Americas annually certifying all Spirits produced in North and South America. In 2012,Mac was honored to be selected to the VAC, VIBE Advisory Council, as part of the Senior Leadership Team overseeing the largest annual beverage conference. Also in 2012, Mac was appointed Director of the Starwood Franchise Advisory Council, advising 12 of North Americas largest Hotel and Resort Franchise Groups including Pyramid, HEI, Interstate, Sage, Davidson, Remington and others. In 2013, Mac introduced Starwood’s new F&B venue concept, most recently opening the Whistler Grill and Vine on December 5th, 2013 at the Award Winning Westin Whistler Resort and Spa in Whistler, BC Canada. In April 2014 Mac concluded seven ½ great years with Starwood, as he was honored with the position of Chief Executive Officer for Saint Marc USA. Saint Marc USA is owned by Saint Marc Holdings a publicly owned Japanese holding company that among other ventures owns and operates over 800 restaurants in Asia. Mac is blessed to be given the incredible opportunity to introduce Saint Marc to the United States and is opening their first restaurant in September 2015 in Huntington Beach, California.

Mac holds the copyright to 17 beverage recipes and has created numerous liquors with his private recipes as well as originated the concepts for a plethora of new restaurants, coffee bars, lounges, clubs, retail and original food and beverage venues all over the world. He has a profound professional and personal passion in the Food and Beverage Industry, which showcases his cutting edge venue concepts and documents success in operating Hotels, Resorts, Restaurants, Bars and Retail businesses. Mac is published in National and International publications including Wine Spectator, Cheers, Beverage Analyst, The Tasting Panel, Beverage Journal, Santé, Food Art, Hotel F&B Executive, Monterey Herald, The Seattle Times, Arizona Republic, Bartender Magazine, Lodging, 944, Nightclub & Bar, Drinks International, In The MIX, Market Watch, and Robert Plotkin’s BarMedia. Sauza Tequila has even published his recipes in “Toma Margaritas: The Original Guide to Margaritas and Tequila.” From liquors enhanced with his own proprietary recipes, to creating, establishing and executing original F&B venue concepts to constructing and implementing effective, financially viable Food and Beverage models; Mac is a successful, dynamic and proven leader.
